Cooking Christmas dinner is one of my favorite traditions. Our home is guaranteed to be filled with good food, warm laughter, and a table full of some of my favorite people. This year, I am especially excited because my menu has taken on a delicious Nigerian flair, inspired by a recent trip to Southwest Farmers Market.
As I answer my doorbell and push open the door on Christmas Day, the house will already be buzzing with excitement from my two youngest adults. My oldest son and daughter are the fourth to arrive, ready to taste anything that reminds them of the joy of being Igbos. My mom and cousins will roll in next, loud and cheerful as always, bringing extra chairs because we never seem to have enough. A few close friends will complete the circle. Together, we will gather around a table that blends tradition with something beautifully new.
On the menu? A mix of classic holiday favorites and Nigerian dishes that promise bold flavor and plenty of seconds. The star, of course, is VERY jollof rice, made with the perfect blend of fresh roasted tomatoes, peppers, onions, garlic, ginger, and seasoning cubes I picked up from Southwest Farmers Market. Beside it will be a pot of fat-free pepper soup, rich with fresh male goat meat and scented with calabash nutmeg, ehuru, uziza seeds/leaves. And because no Nigerian-inspired feast is complete without it. There will be fried plantains and yams, sweet, golden, and impossible to resist, served with fresh goat meat stew. Sautéed fresh vegetables are in the mix.

I must include my signature delicious egusi, fresh bitter leaf, and fresh okra soups made with assorted proteins, fresh and dried, served with options of hot pounded yam and Ijebu garri. Adding these dishes to our Christmas table feels like blending the warmth of the season with the comforting taste of home.
